4 Easy and Healthy Salads

I have 4 easy and healthy salads that I know you are going to love. They are so simple to make and meal-prep friendly, perfect for you to make ahead so when hunger hits you are ready to eat.

Serves 1

Chicken Avocado Salad

Ingredients:
4 oz cooked chicken
1 tbsp grass-fed butter
1/2 avocado
1/2 cucumber
2 small roma tomatoes
1/4 cup red onion
Minced cilantro
Garlic powder
Pepper
1/2 lime juice
1 tbs mayo

Method:

  1. Cut the chicken into strips.
  2. In a pan melt butter, add the chicken and season with spices (garlic powder and pepper)
  3. When the chicken is cooked, place in a bowl and add cucumber, cilantro, onion, tomato, mayo, avocado and lime juice. Mix really well.

Chipotle Pasta Salad

Ingredients:
1 tbsp grass-fed butter
1 cup cooked pasta
4 oz ground beef
1/2 cup cherry tomatoes
1/4 cup green onion
1/4 cup cilantro
1/2 corn cob
Salt

Chipotle sauce: 3 tbs yogurt, 1/2 lime juice, 1 adobo chipotle, sea salt to taste

Method:

  1. In a pan melt 1 tbsp butter and cook the beef. Season with salt
  2. In a bowl add the pasta, beef, tomatoes, corn, onion and cilantro.
  3. To make the sauce, place all the ingredients in the blender and mix really well.
  4. Add the sauce to the salad and mix.

Quinoa Tabbouleh Salad

Ingredients:
1 cup cooked quinoa
1/2 cup cherry tomatoes (cut in half)
1/4 cup minced parsley
3 tbs minced fresh mint
1 tbs olive oil
1/2 tbs tahini
1/2 lemon juice
Salt & pepper
1/4 cup green onion
2 tbs kalamata olives

Method:

  1. In a bowl mix all the ingredients, serve and enjoy!

Broccoli Tuna Salad

Ingredients:
1/2 head of broccoli
1/4 cup minced parsley
1 can tuna
1 tbs mayo
1/4 cup green onion
1 tsp dijon mustard
Salt and pepper
2 tbs pumpkin seeds

Method:

  1. Place the broccoli in a food processor (or a cheese grinder) and process until its a rice consistency
  2. In a bowl mix all the ingredients and serve.
