5 Breakfast Ideas for the Week

Here are 5 super easy, healthy and delicious breakfast ideas for the week. Perfect for the whole family and all these recipes are meal-prep friendly, this way you can have them ready for on the go or for when you get hungry at home.

Serves 1

Egg Muffin

Ingredients:
1 english muffin
4 eggs
2 tbsp vegetable milk (or your favorite)
2 tsp mustard
Fresh parsley (to taste)
Sea salt (to taste)
1 tbsp butter
Optional: tomato, spinach, avocado

Method:

  1. In a bowl mix the eggs, milk, mustard, parsley and salt. Stir very well.
  2. Place butter in a pan, wait for it to melt a little and pour the egg mixture.
  3. Cook over medium low heat for about 7 minutes.
  4. Cut the omelette into triangles.
  5. Spread a little butter on the muffin and place the egg frittata on top. Add any optional ingredients to your sandwich.

Sweet Wrap

Ingredients:
1 whole wheat tortilla
2 tbsp almond butter
1/2 banana
3 strawberries
Pinch of cinnamon
Pinch of sea salt

Method:

  1. Spread the almond butter on the tortilla and place the fruit slices.
  2. Fold like burrito
  3. Enjoy!

Hard Boiled Eggs

Ingredients:
3 boiled eggs
Olive oil, to taste
Fresh parsley, to taste
Pinch of sea salt
Cayenne powder, to taste

Method:

  1. Cook the eggs and season them.

Chia Pudding

Ingredients:
1/4 cup chia seeds
1 cup almond milk (or your favorite)
1 tbsp honey
Pinch of cinnamon
Pinch of sea salt
Toppings: any fruit you want

Method:

  1. In a mason jar mix the milk, chia seeds, honey and cinnamon. Stir very well.
  2. Put in the refrigerator and let it rest for at least 1 hour.

Banana Pancakes

Ingredients:
1 banana
2 eggs
Pinch of salt
1 tbsp butter
Maple honey, to taste
Pinch of cinnamon

Method:

  1. Crush the banana and mix with the egg and salt.
  2. In a pan add the butter, wait for it to melt and pour the mixture.
  3. When it starts to bubble, flip the pancake so that it cooks on both sides.
  4. Finish with maple syrup and cinnamon!
