5 Butternut Squash Recipes
Serves 1
Noodles
Ingredients:
3 cups Spiralized butternut squash
1/4 cup green onion
Dressing: (blended)
1/4 cup soaked cashews
Juice of 1/2 lemon
Salt & pepper
Method:
- With a spiralizer make noodles from the butternut squash.
- In a blender place all the dressing ingredients and blend really well.
- In a bowl add the noodles, the green onion and the dressing. Mix and enjoy!
Salad
Ingredients:
Mixed greens
2 cups cooked butternut squash cut into medium pieces
1/4 cup cranberries
2 tbsp green onion
1 apple
Bunch of hemp seeds
Juice of ½ lemon
1/2 tbsp olive oil
1/2 tbsp rice vinegar
Salt & pepper
Chopped jalapeno or serrano (optional)
Crushed walnuts
Method:
- In a bowl mix all the ingredients, mix really well.
- Serve and enjoy!
Soup
Ingredients:
2 cups butternut squash cut into medium pieces (cooked)
2 tbsp green onion
2 tbsp jalapeno
3-4 cups veggie broth
½ cup coconut milk
2 dates
1 tsp curry powder
Dash of turmeric powder
Dash of oregano
Dash of paprika
Salt & pepper
Serve with parsley and paprika
Method:
- In a pot spray avocado oil and heat it up and add the green onion and jalapeno. Cook for 1 minute then add the veggie broth and stir.
- After 2 minutes add the coconut milk and the butternut squash, stir again. Cover with a lid and let it simmer for 5 minutes.
- Season with salt and paprika and cover again.
- Pour the soup into a blender and blend until smooth. Season with a dash of oregano, turmeric and curry powder, add the dates and blend again.
- In a bowl serve the soup and sprinkle with pepper, cayenne and top it off with parsley.
Fries
Ingredients:
2 cups of butternut squash (cut in thin slices)
Avocado oil
Dash salt
Dash pepper
Dash oregano
Dash paprika
Method:
- Cut the butternut squash in thin slices (like french fries)
- Place them in the air fryer and season with salt, pepper, paprika, oregano. Cover them in avocado oil and mix them all together.
- Cook them at 400F for 15 minutes in the air fryer.
- Take them out and enjoy them with ketchup!
Fritters
Ingredients:
2 cups shredded butternut squash
1 egg
4 tbsp oat flour
¼ cup green onion
Salt and pepper to taste
Onion powder to taste
Vegan mozzarella
Method:
- In a bowl mix the butternut squash, the flour, the egg and the green onion. Season with onion powder and continue to mix really well.
- In a pan spray avocado oil and form patties with the mixture, place them and cook on each side for 3 minutes.
- Drizzle vegan mozzarella on top and let it melt.
- Serve them and enjoy!
