5 Easy, Healthy, Fast and Cheap Dinners

Sometimes our busy routines make cooking fancy meals difficult. We can still find a way to eat healthy by meal prepping. These simple recipes will help you keep a balanced diet that adapts to your needs, and this way you will have your dinner ready when you return home at night after work / school. All the ingredients are simple and delicious! ⁣

Serves 2

1.Cauliflower Rice with Chicken

Ingredients:
Avocado oil
Chicken
Salt and pepper
3/4 cup raw cauliflower
Coriander
Chives
Serrano pepper
Lemon
Salt and pepper
Coconut oil
1/2 avocado
* You can eat it in the form of a taco with corn tortillas

Method:

  1. In a pan heat avocado oil, add the chicken and sprinkle with salt and pepper to cook.
  2. Once cooked, cut the chicken into small pieces.
  3. To make the rice, chop the cauliflower and put in a food processor. If you don’t have a processor, cut the cauliflower and make the rice with a grater.
  4. In a bowl put the cauliflower, chicken, coriander, chives, serrano pepper, lemon juice, salt and pepper.
  5. Mix very well.
  6. Add a tablespoon of melted coconut oil to make it creamier. Mix again.
  7. Serve.

2. Pasta Salad

Ingredients:
1 package of pasta
Black olives
2 chopped tomatoes
1 cucumber
1/2 red onion
Basil
Salt
Olive oil

Method:

  1. In a pan boil water, add the pasta with a tablespoon of salt.
  2. When cooked, strain the pasta and transfer it into a bowl.
  3. Add tomato, red onion, olives, cucumber, basil and olive oil.
  4. Sprinkle salt to taste and serve.

3.Tuna salad with potato

Ingredients:
1 can of tuna
1 potato
1 cup chickpeas
1/2 avocado
1/2 red onion
2 tablespoons of Dijon mustard
Salt and pepper

Method:

  1. Dice the potato and cook it in water or in the oven.
  2. In a bowl add the tuna, chickpeas, red onion, mustard, potato, salt and pepper.
  3. Mix everything very well, add diced avocado.
  4. Mix again.
  5. You can have it by itself or serve it on a pita bread, with tortillas or on a bed of lettuce.

4. Strawberry Spinach Salad

Ingredients:
Spinach
1/2 cup strawberries
Nutsa
1/2 avocado
Balsamic vinegar
Olive oil
Salt and pepper
(optional add protein of choice)

Method:
Mix all the ingredients on a plate.

5. Salmon Patties

Ingredients:
2 salmons
1/4 chopped onion
2 eggs
3 tablespoons mayonnaise
Salt and pepper
Garlic powder, paprika, oregano
3 tablespoons of avocado oil
Avocado

Method:

  1. Heat avocado oil in a pan, place the salmon with salt and pepper.
  2. With the lid closed, cook on one side for 5 minutes then turn and cook for another 3 minutes.
  3. In a bowl, shred the salmon and add mayonnaise, chopped onion, paprika, garlic, oregano, salt and pepper. Mix it all very well.
  4. Smash two eggs to hold the mixture together.
  5. In a tray make patties and put them in the refrigerator to sit for 30 minutes.
  6. In a pan with avocado oil put the patties to cook, cover the pan with the lid and cook for 3 to 4 minutes on each side.
  7. Serve the patties with salad or as a hamburger.
