5 Healthy Salads

These healthy salads are bursting with nutritious ingredients, delicious flavors, textures and rich in protein. Whether you want to add more plant-based meals to your diet or make salads more exciting, I know you’ll love all of these!

Serves 1

1. Pasta Salad

Ingredients:
1 cup cooked pasta
4 oz chicken
½ cup sweet corn
Small bunch cilantro
Serrano or jalapeno
½ juice of lemon
Pinch of cayenne
¼ avocado
Pinch of salt & pepper
Mixed greens
Olive oil

Method:

  1. In a pan with avocado oil, place the chicken, season with salt and cook for 15 minutes
  2. In a bowl add all the ingredients and mix very well.
  3. Serve the mixture over a bed of greens and drizzle olive oil.

2. Egg salad

Ingredients:
Avocado oil
½ cup chickpeas
Dash salt & pepper
Pinch of paprika
1 tsp soy sauce (or tamari)
2 cups mixed greens
2 hard boiled eggs
1 tomato
½ avocado
2 tbsp red onion

Dressing:
2 tsp olive oil
Juice of ½ lemon
1 tsp mustard
¼ cup of water
Salt & pepper

Method:

  1. In a pan with avocado oil, cook the chickpeas, season with salt, pepper, paprika and soy sauce for 15 minutes, until they’re crunchy.
  2. In a bowl with a bed of greens add all the ingredients.
  3. Drizzle the lemon vinaigrette on top and enjoy!

If you are obsessed with EGG SALADS like I am, here is another recipe with coconut yogurt, avocado and mustard that you need to try, it’s one of my favorites!

3. Beet Salad

Ingredients:
2 cups mixed greens
1 cup cooked beets
Small punch of parsley
2 tbsp green onion
1 avocado
2 tbsp cashews
½ orange slices

Dressing:
1 tbsp olive oil
Pinch of sea salt
½ juice of lemon

Method:

  1. In a pot with water cook the beets for 15 minutes or until they are soft.
  2. In a bowl place all the ingredients and mix very well.
  3. Serve over a bed of greens, add the cashews on top and drizzle the dressing!

4. Tuna Salad

Ingredients:
1 can of tuna
¼ cup celery
½ avocado
¼ cup red onion
½ apple
1 tbsp serrano or jalapeno
½ tomato
Juice of ½ lemon
Small bunch of cilantro
Mixed greens

Method:

  1. In a bowl mix all the ingredients and enjoy!

5. Tofu Veggie Salad

Ingredients:
2 cups mixed greens
½ block tofu
1 large carrot
¼ bell pepper
2 tbsp green onion
Salt & pepper
1 tsp maple syrup
1 tsp soy sauce

Tahini Dressing:
1 tbsp Tahini
1 tsp soy sauce
¼ tsp ground ginger
1 tsp maple syrup

Method:

  1. In a pan with avocado oil, add the tofu and season with salt, pepper, soy sauce and maple syrup. Mix really well and let it cook for 15 minutes until you get a crunchy on the outside soft on the inside texture.
  2. In a bed of greens add the other ingredients and drizzle the delicious creamy tahini dressing!

Salad recipes are my favorite way to combine textures and flavors with different kinds of fruits and veggies, they are so good on their own but simple touches can turn them into amazing meals. When I don’t know what to do, summer salads are the perfect solution, they’re simple to make, but totally delicious and filling.
