5 Minute Dinners

I know it may sound too good to be true, but you can actually make a healthy and delicious meal in just 5 minutes! These 5 minute dinners are delicious, healthy, budget friendly and really easy to make.

Serves 1

Shrimp Garlic Tacos

Ingredients

1 tablespoons butter (or ghee)
4 cloves garlic, thinly sliced
1 pound medium shrimp (peeled)
Salt, to taste
Pepper, to taste
Juice of ½ lemon
1/4 cup chopped parsley
Red pepper flakes (optional)
3 romaine lettuce leaves

Note: You can eat this with bread, tortillas, in a salad but today I’m making it with lettuce wraps

Method:

  1. Heat a pan in medium heat and add the butter and garlic, let it cook for a couple of minutes.
  2. Add the shrimp and cook it for 3 minutes. While it cooks, add salt, pepper and lemon juice.
  3. Turn off the heat and add the parsley and red pepper flakes. Mix.
  4. Get your lettuce and add the shrimp inside, fold like tacos. Enjoy!

Chicken Soup

Ingredients

2 cups water
Bun of sea salt
120g sliced chicken breast
1 clove garlic, chopped (or powder)
1 zucchini, sliced
1-2 mushrooms, sliced
1 handful spinach leaves
Lime juice (optional)

Method

  1. In a pot, boil 2 cups of water and add sea salt to taste. Once it starts boiling, turn it down to low heat and add the chicken breast for 3 minutes.
  2. After the 3 minutes add the veggies and cook it for 2 more minutes.
  3. Season the soup with salt, pepper and garlic. Stir and add the spinach.

*This recipe is meal-prep friendly. This way you can have it ready in the fridge and have it for the rest of the week.

Garbanzo Bruschetta

Ingredients

1 can of garbanzo beans
½ cup of green onion, sliced
½ cup of tomato, sliced
¼ of parsley, chopped
1 tbsp olive oil
¼ cup of black olives, sliced
Salt and pepper, to taste
2 bread slices

Method

  1. In a bowl place the garbanzo beans and mashed them with a fork.
  2. Add the green onion, tomato, parsley, olive oil, olives, salt and pepper. Mix very well.
  3. Serve it on top of toasted bread.

Cucumber Rolls

Ingredients

1 cucumber
1 can tuna
1 tbsp mayo
2 tsp garlic powder
Salt & pepper, to taste
Chili powder, to taste
Bunch of green onion
Bunch of parsley
½ avocado, sliced

Method

  1. Peel the whole cucumber and with the peeler make cucumber strips.
  2. In a bowl add the tuna, mayo, garlic, chili, green onion, parsley, salt and pepper. Mix very well.
  3. Take the cucumber strips and add the tuna mix on top, place a slice of avocado and roll up.

Egg Tacos

Ingredients

2 eggs
1/2 tablespoon olive oil
1/2 tablespoon chili powder
1/2 tablespoon garlic powder
1/2 tablespoon cumin powder
Salt and pepper, to taste
2 corn tortillas
Sliced red onion
Bunch of cilantro
Hot sauce (optional)

Method

  1. In a bowl, crack 2 eggs and beat them.
  2. In a hot pan add olive oil and pour the eggs, let it cook for 30 seconds.
  3. Season the eggs with the powders and salt and pepper. Mix very well.
  4. Heat up corn tortillas, place the egg inside, add the onion, cilantro and hot sauce.
  5. Fold the taco and enjoy!

These recipes are proof that cooking doesn’t have to be complicated, you can actually enjoy something you made yourself even if your life schedule is crazy.
