7 Bean Recipes … YUMM!

Beans are an amazing food! They’re full of healthy protein that’s easy to digest, so they’re ideal for building muscle. Because they keep you satiated, they also help with weight loss and resisting junk food cravings. I love them so much that I decided to share seven recipes using beans!

Serves 1

Bean Ice Cream

Ingredients:
2 cups beans
1 banana
1 cup almond milk
1/4 cup maple syrup

Method:
Place all of the ingredients into a resealable plastic bag and put them in the freezer until frozen.
Put all the ingredients in your food processor and process well. Enjoy!

Bean Salad

Ingredients:
4 cups spinach
1 cup pinto beans
1 cup black beans
1 cup corn
1 cup pico de gallo
1/2 avocado (optional

Method:
Put the spinach in a large bowl. Put the pinto beans, black beans, corn, and pico de gallo on top, each filling one quadrant of the top of the spinach.
Garnish with sliced avocado, if you want. This is delicious, filling, and great for your heart!

Bean Cream Soup

Ingredients:
1 1/2 cups black beans
1 cup veggie broth
salt and pepper to taste
2 teaspoons cumin
2 large tomatoes
1/2 medium white onion
2 garlic cloves

Method:
Blend the first four ingredients together thoroughly.
Pour the blended soup into a pot and heat on medium.
While the soup heats, dice the tomatoes and onion and mince the garlic. Heat the tomatoes, onion, and garlic in a separate pan, stirring frequently.
When the tomato mixture is cooked well, pour it into your blender and blend until smooth. Add it to the pot with the bean soup. Continue heating until piping hot, serve, and enjoy!

Bean “Meatballs”

Ingredients:
2 large carrots
1/2 medium white onion
small handful of cilantro
2 cups black beans
1 garlic clove
paprika to taste
salt and pepper to taste (optional)
1 1/2 cups oatmeal flour

Method:
Shred the carrot. Finely chop the onion. Mince the cilantro.
Place all of the ingredients except the oatmeal flour into a food processor and process until they’re smooth.
Add the oatmeal flour and process again until it’s well-combined with the other ingredients.
Form the mixture into meatball-sized balls on a baking sheet, and bake at 375 degrees Fahrenheit for 20 minutes. Flip them over and cook for another 5-10 minutes.

Tip:
Blend together 1 large tomato tomato, 1/4 white onion, and a bit of cilantro to make a dipping sauce!

Bean Patties

Ingredients:
2 cups black beans
1/2 white onion
1 garlic clove
small handful of cilantro
1/2 cup oat flour
1/4 cup crushed walnuts
2 tablespoons nutritional yeast
1 tablespoon tamari or soy sauce
1 tablespoon mustard
salt and pepper to taste
1/2 cup oats
olive oil (optional)

Optional toppings:
lettuce
tomato slices
mustard
onion slices
avocado
ketchup

Method:
Finely chop the onion. Crush the garlic clove. Mince the cilantro.
Put all of the ingredients except the oats, olive oil, and optional toppings into a bowl and mash well until they’re thoroughly mixed.
Add the oats and mix well.
Lightly coat a pan with olive oil (optional). Form the bean mixture into patties and fry over medium heat, flipping once when the first side is a gorgeous, medium shade of brown.
Layer your burger with whatever optional toppings you want! Use the ones listed, or come up with your own. You can use a bun, but I love to eat these with lettuce functioning as the bun instead.

Bean Brownies

Ingredients:
2 cups black beans
1 flax “egg”
1/2 cup maple syrup
1 tablespoon vanilla extract
1 tablespoon coconut oil
1 teaspoon salt
1/2 teaspoon baking powder
1/2 avocado
1 1/2 cups cacao powder
1/2 cup vegan chocolate chips

Method:
Thoroughly process all of the ingredients except the chocolate chips in a food processor.
Lightly oil a 9×9” baking tray. Spread the mix evenly in the tray, sprinkle on the chocolate chips, and stir lightly to cover them with batter.
Bake at 375 degrees Fahrenheit until a toothpick inserted into the center comes out clean.

Enfrijoladas

Ingredients:
1/4 white onion
2 cups beans
salt and pepper to taste
1 tablespoon olive oil
3 corn tortillas
1/2 avocado
1/4 cup raw vegan cream

Method:
Finely chop the onion.
Place the beans in a pan and add salt and pepper to taste. Mash with a potato masher.
In a separate pan, heat the corn tortillas until they begin to develop golden spots, flipping regularly.
Place 1 tablespoon of mashed beans into each of the heated tortillas. Spread it out evenly over half the tortilla, then fold the tortilla in half. Yes
Spread more of the mashed beans on top of the folded tortillas. Garnish with avocado slices and raw vegan cream.

Tip:
To make raw vegan cream, blend cashews, lemon juice, and garlic to taste until smooth!

One of my favorite strategies is to make a ton of beans, put them in resealable bags, and stick them in the freezer! This way you have them whenever you want to make one of these delicious recipes. Just pull out a bag, put on some of your favorite upbeat music, and start dancing and cooking!
