Serves 1
Egg and Zucchini Tacos
Ingredients:
2 corn tortillas
1/2 teaspoon butter
2 zucchini finely diced
2 eggs
Salt
Method:
- Heat up the tortillas.
- In a pan add the butter and cook the zucchini for 3 minutes.
- In a bowl break the eggs and beat them, add a pinch of salt and transfer the mixture to the pan with the zucchini. Mix very well.
- Assemble the tacos.
Tuna Egg Sandwich
Ingredients:
1 can of tuna
1/2 bunch of minced parsley
2 celery stalks, diced
Salt & pepper
1/2 lemon juice
1 teaspoon of olive oil
1 slice of bread
1/2 teaspoon butter
1 egg
Method:
- In a bowl mix the tuna, parsley, celery and season with salt, pepper, lemon and olive oil. Mix very well.
- In a frying pan heat the butter and cook the egg sunny side up and season with salt to taste.
- Serve the tuna salad and egg on top of the bread.
Lentil Tostadas
Ingredients:
1/2 cup of lentils
1 1/2 of water
1 cup of potato finely diced
Oregano
Cumin
Paprika
Salt and pepper
Onion
Cilantro
Method:
- In a pot, heat the water with the lentils and season with salt. Cook for 15 minutes over medium-low heat.
- Add the potato and leave it to cook for another 10 minutes.
- Remove the water with a strainer and transfer to a bowl to season with the spices.
- Serve the mixture on two tostadas and finish them with onion, cilantro and olive oil.
