Fit Mom Meal Prep

Meal prepping is a lifesaver for busy weeks. It not only saves time but also ensures you have healthy, delicious meals ready to go. By dedicating a few hours each week to meal prep, you can enjoy stress-free mealtimes and avoid the temptation of unhealthy fast food.

Here are a few of my favorite meal prep recipes that are simple, nutritious, and perfect for the whole family.

Breakfast Wrap

Ingredients:

  • Multigrain tortilla wrap
  • 2 eggs
  • Turkey ground meat
  • American cheese
  • Jalapeños

Method:

  1. Scramble the eggs in a non-stick pan until cooked.
  2. Cook the turkey ground meat until browned and fully cooked.
  3. Lay out the multigrain tortilla and add the scrambled eggs, turkey, sprinkle American cheese, and jalapeños.
  4. Roll up the tortilla into a wrap and store in aluminum foil.

Parfait

Ingredients:

  • Greek yogurt
  • Berries (strawberries + blueberries)
  • Grain-free granola

Method:

  1. In a jar (my favorites are these from Amazon), layer Greek yogurt, fresh berries, and granola.
  2. Repeat the layers until the container is full.
  3. Cover and refrigerate. These parfaits make a perfect grab-and-go breakfast or snack.

Pasta Salad

Ingredients:

  • Pasta (cooked and cooled)
  • Grilled chicken (diced)
  • Tomato (chopped)
  • Red onion (chopped)

Dressing:

  • Greek yogurt
  • Cilantro (chopped)
  • Lime juice
  • Garlic powder
  • Jalapeño (finely chopped)

Method:

  1. In a large bowl, combine the cooked pasta, grilled chicken, tomato, and red onion.
  2. In a blender add the Greek yogurt, cilantro, lime juice, garlic powder, and jalapeño to make the dressing.
  3. Pour the dressing over the pasta mixture and toss to combine.

Meatballs

Ingredients:

  • Ground beef
  • Minced mint
  • Garlic powder
  • Onion powder
  • Sea salt
  • Pepper

Method:

  1. In a bowl, mix together the ground beef, minced mint, garlic powder, onion powder, sea salt, and pepper.
  2. Form the mixture into small meatballs.
  3. Bake at 375°F (190°C) for 20-25 minutes or until fully cooked.

Tips for Meal Prepping:

  1. Plan Your Meals: Plan your meals for the week ahead of time. This ensures you have all the ingredients you need and helps avoid last-minute grocery runs.
  2. Batch Cooking: Cook large batches of your favorite recipes so you have plenty of leftovers to last throughout the week.
