Seven Recipes Starring Avocados
When I go to the supermarket and see amazing, plump, perfectly ripe avocados, I can never resist getting some! Can you relate?! If so, you’ll love these seven recipes. Avocados are rich in essential vitamins and minerals, so don’t feel guilty about the fat content. Just don’t eat too many!
Serves 1
1. Avocado Toast
Ingredients:
2 slices of sourdough bread
1 avocado
1/2 cup spinach
7-10 cherry tomatoes
2 tablespoons hemp seeds
salt and pepper to taste
Method:
Cut the cherry tomatoes in half. Toast the bread. Smash the avocado with a fork.
Arrange the spinach into a layer on each slice of sourdough toast.
Spread half of the smashed avocado onto each slice. Arrange the cherry tomato halves on top, facing upright to be extra pretty.
Sprinkle with the hemp seeds and salt and pepper to taste.
2. Avocado Ice Cream
Ingredients:
2 avocados
1 cup coconut cream
1 can coconut milk
3/4 cup maple syrup
1/4 teaspoon salt
Method:
Blend all of the ingredients until smooth. Pour into a bowl, cover, and freeze for four hours.
Put the finished ice cream into a nice serving dish, and enjoy!
3. Avocado Smoothie
Ingredients:
1 avocado
1 banana
1 1/2 cup almond milk
1/2 cup spinach
Method:
Blend all of the ingredients. It’s that easy!
4. Avocado sushi
Ingredients:
1 nori sheet
1/2 teaspoon apple cider vinegar
1/2 cup cooked white rice
1/2 avocado
1/4 cucumber
1 tablespoon sesame seeds
Sauce ingredients:
Juice of 1/2 lime
1 tablespoon cilantro
3 tablespoons tamari or soy sauce
Method:
Place a sheet of plastic wrap over a clean towel. Put the nori sheet onto the plastic wrap.
Using your hands, mix the apple cider vinegar into the rice.
Sprinkle the rice over the nori sheet, leaving a 3/4” strip uncovered on all sides.
Slice the avocado and cut the cucumber into strips. Arrange the slices and strips pointing in one direction in the center of the rice-topped nori.
Pick up one edge of the towel and fold it inward toward the middle. Put the towel back down, then continue rolling the nori, pulling back the plastic wrap as you go.
Cut the log into 3/4” rounds.
For the sauce, first mince the cilantro. Mix it with the other sauce ingredients.
Sprinkle the sauce and sushi with the sesame seeds, and enjoy!

5. Avocado pasta
Ingredients:
1 package pasta
1 avocado
1/2 cup fresh basil
1/2 teaspoon garlic powder
1 cup almond milk
salt and pepper
5-10 cherry tomatoes
Method:
Cook the pasta according to package directions.
While the pasta cooks, put the avocado, basil, and garlic powder in a blender. Blend with the almond milk, and season with salt and pepper to taste.
Plate the pasta, then top it with the blended avocado sauce. Cut the cherry tomatoes in half, and finish the plate with the cut tomatoes.
6. Avocado salad
Ingredients:
1/2 cup cherry tomatoes
1 cup spinach
1 avocado
1/4 cup corn, roasted
1/2 mango
1/4 cup cilantro
juice of 1/2 lime
Method:
Cut the cherry tomatoes in half. Mince the cilantro. Cube the avocado and mango.
Mix all of the ingredients except the spinach. Arrange the spinach in a bed on a plate, then pour the mixture on top. Enjoy!
7. Guacamole
Ingredients:
1 avocado
1/4 red onion
2 tablespoons cilantro
1 tomato
juice of 1 lime
salt and pepper to taste
1/2 serrano chili
Method:
Dice the tomato. Finely chop the onion. Mince the cilantro and serrano pepper.
In a bowl, mash the avocado with a fork.
Add the prepared tomato, onion, cilantro, and serrano pepper, and mix well. Stir in the lime juice and salt and pepper to taste. So simple and so, so good!
