Raw Vegan Laxative Salad

Here’s a tough truth: all of us get kinda backed up and have a hard time going to the bathroom sometimes. That’s why this laxative salad is one of my favorites! Raw salads can help your digestive system, which encourages easy, regular bowel movements. So eat up!

Serves 1

Ingredients:
1/2 cucumber
1 bell pepper (any color)
2 carrots
1 cup cherry tomatoes
1/2 red onion
1/2 cup quinoa
cilantro to taste
plenty of mixed greens (use as much as you want!)
1 avocado

Dressing:
1 tablespoon apple cider vinegar
1 lime
Himalayan salt and black pepper to taste

Method:
Dice the cucumber and bell pepper. Shred the carrots. Cut the cherry tomatoes in half. Slice the red onion. Roughly chop the cilantro. Cook the quinoa according to package directions.
Put as much mixed greens as you can handle in a big bowl. Add the cucumber, cherry tomatoes, bell pepper, carrots, red onion, the cooked quinoa, and the chopped cilantro.
Top the salad with the apple cider vinegar, the juice of one lime, and salt and pepper to taste. Mix to combine everything.
Slice or dice the avocado according to your preferences, put it on top of the salad, and enjoy!

One of the great things about raw salads is that they’re seriously like a broom for your insides. They clean out your intestines and colon, which in addition to making your movements regular can also even cause a better mood and a flat stomach!
