One Day Raw Vegan
Lots of days, I eat completely raw vegan food! Even though I eat cooked foods too, completely raw days make me feel revitalized and energized. I’d like to invite you to join me in a day of delicious, raw, vegan food!
Serves 1
As soon as you wake up:
Drink plenty of water with lemon.
Breakfast: Smoothie Bowl
Ingredients:
1 banana
1 cup papaya
1 cup spinach
1 tablespoon hemp seeds
1 scoop of Vivo Life Protein
1 teaspoon spirulina
a little bit of kale
2 cups flax milk
shredded coconut
Method:
The night before you want to have this smoothie, put the banana, papaya, spinach, and hemp seeds in a resealable plastic bag. Freeze overnight.
When it’s time for breakfast, put the protein powder, spirulina, frozen contents of the bag you prepared, kale, and flax milk in a blender. (Tip: remove the kale stems to make your smoothie less bitter.)
Pour the smoothie into a bowl and top with shredded coconut.
Snack:
Between breakfast and lunch, I love to drink some kombucha!
Lunch: Wraps (or Lettuce Tacos)
Ingredients:
1 tomato
1/2 cucumber
a little bit of red onion
1 avocado
1 cup kale
organic veggie wraps (or romaine lettuce)
lemon
apple cider vinegar
coconut aminos
salsa (optional)
On the side:
carrots with tahini
kale salad with tomato, salt, and pepper
Method:
Cut the tomato and cucumber into strips. Finely slice the red onion. Mash the avocado. Chop the kale.
Spread the mashed avocado on a wrap or lettuce leaf. Top with the sliced tomato, kale, cucumber, and red onion. If you’re using a wrap, roll it closed.
Drizzle the wrap or lettuce taco with coconut aminos, apple cider vinegar, lemon juice, and (optionally) salsa to taste, and enjoy with the sides!
Zucchini Noodles
Ingredients:
2 zucchini
2 cups romaine lettuce
2 avocados
1 cucumber
1/2 cup red onion
1 teaspoon apple cider vinegar (optional)
1 teaspoon coconut aminos (optional)
salsa (optional)
Dressing:
1 mango
2 cups cherry tomatoes
1/2 cup cilantro
lime juice
1 serrano pepper
Method:
Cut the zucchini into noodles using a spiralizer, mandoline, or even a vegetable peeler.
Chop the romaine lettuce. Slice the avocados, cucumber, and red onion.
Put all of the dressing ingredients into a blender and blend until almost smooth.
Top the zucchini noodles with the other ingredients, as well as your yummy dressing. Enjoy!
