Three Quick Breakfast Recipes
We’ve all been there. You’ve hit snooze too many times, and now you’re running late for work or school. You haven’t prepped anything, and don’t have time to cook, so you just grab anything you see. Make these recipes to ensure you always have a great breakfast on hand!
Serves 1
1. Smoothie Bowl
Ingredients:
1 banana
1 cup berries
1 cup kale
1 teaspoon almond butter
Toppings:
1 banana
2 tablespoons blueberries
1 tablespoon shredded coconut
Method:
Freeze the banana and berries.
Put the frozen banana and berries in a blender with the kale and almond butter. Blend until smooth. Pour this into a resealable freezer-safe container and store until your next rushed morning!
Serve topped with a sliced banana, fresh blueberries, and shredded coconut.
2. Pancake Overnight Oats
Ingredients:
1 banana
1/2 cup raw oats
1/4 cup blueberries
1 cup almond milk
Method:
The night before you expect to have a busy morning, prepare your overnight oats. First, slice the banana. Put the oats, blueberries, and sliced banana into a jar.
Pour the almond milk over the oats, seal the jar, and shake well! Refrigerate the jar overnight.
3. Black Bean Sandwich
Ingredients:
2 slices of whole wheat bread
1/2 cup mashed beans
1 tablespoon mustard
1/2 cup lettuce
1/2 avocado
salt and pepper to taste
¼ red onion
1 serrano pepper (optional)
Method:
Spread the mashed beans on one slice of the bread. Spread the mustard on the other slice of bread.
Slice the lettuce and arrange it evenly over the bread with mashed beans.
Slice the avocado onto the lettuce. Mince the red onion and sprinkle it over the avocado. Optionally, slice the serrano pepper and add it.
Close up the sandwich, wrap in a paper towel, stick it in a resealable plastic bag, and enjoy!
