Three Delicious Recipes for Fall
Fall is here! The leaves are changing to brilliant colors, the weather is cooling off, and your body might be begging for something warm and satiating! You’re in luck: here are three recipes to satisfy those cool-weather cravings without packing on the pounds. You’ll probably even lose weight!
Serves 1
1. Roasted Cauliflower Soup With Garlic
Ingredients:
1/2 head cauliflower
1 carrot
1/2 onion
1 tbs garlic powder
avocado oil (optional)
1 teaspoon smoked paprika
4 cups vegetable broth
1 cup almond milk
2 tablespoons nutritional yeast
salt and pepper to taste
Garnish:
handful of parsley
Method:
Preheat the oven to 350 degrees Fahrenheit. Chop or break the cauliflower into florets. Peel and slice the carrot. Thinly slice the onion. Chop the parsley.
Spread the cauliflower in a single layer on a baking sheet, and sprinkle with garlic powder.
Optionally, spray with some avocado oil
Bake the seasoned cauliflower for 15 minutes at 350 degrees Fahrenheit.
In a pot, saute the onions in a little bit of water, adding the paprika, salt, and pepper. After a few minutes, add the carrots and continue to cook.
Add the vegetable broth, then bring to a boil.
Add the almond milk and continue to cook for about 5 minutes.
Put the soup mixture in a blender, then add the roasted cauliflower. Reserve a few small florets for plating.
Blend for about a minute, or until smooth.
Serve the soup topped with chopped parsley and any leftover roasted cauliflower florets. Yum!
2. Pumpkin Spice Overnight Oats
Ingredients:
1/2 cup almond milk
1/2 cup rolled oats
1 tablespoon canned pumpkin puree
1 teaspoon pumpkin pie spice
1 tbs maple syrup
1 tbs of pumpkin seeds
Method:
Put all the ingredients in a glass jar. Stir well, cover, and refrigerate overnight.
The next morning, remove the oats from the fridge, and enjoy!
3. Leafy Fall Salad
Ingredients:
1 Fuji apple
1 green apple
1/4 cup of chopped pecans
1 cup arugula
2 cups spinach
1/4 cup dried cranberries
Dressing:
1 lime
salt and pepper
maple syrup
Method:
Core and thinly slice the apples (no need to peel!). Chop the pecans if they aren’t already chopped.
Put the arugula, spinach, apple slices, chopped pecans and cranberries in a large bowl.
Squeeze the juice of the lime over the ingredients in the bowl. Sprinkle with salt and pepper, and drizzle with maple syrup to taste.
Toss the salad well, and enjoy!
