Blueberry Almond Waffles

If you are anything like me you’ll find yourself sometimes having the same thing for breakfast over and over, stuck in a routine. That why it’s good to have a few fun recipes up your sleeve to change things up a bit. This delicious Blueberry Almond Waffles are one of my favorites to make, extremely easy and fulfilling. Sure to satisfy your sweet tooth and perfect for a weekend brunch!

Serves 1

Ingredients:
2 cups of almond flour
1 Teaspoon of baking soda
1/4 teaspoon of salt
3 large eggs
2 tablespoons of vanilla extract
1/2 teaspoon of stevia extract
1/2 cup of coconut milk
6 oz blueberries
1 tablespoon of melted ghee

Method:
1. In a bowl, whisk together the almond flour, baking soda and the salt.
2. In a separate bowl, whisk the eggs with the vanilla extract, stevia drops and the coconut milk.
3. Add the liquid mixture to the flour mixture, until it’s incorporated.
4. Add to the mix the blueberries.
5. Spread melted ghee to the waffle maker and pour the batter into it. Close the lid and let it cook until it puffs and sets.
6. Serve, add maple syrup and coconut cream to taste.
7. Enjoy!
