Butternut Squash Salmon Salad
This butternut squash salmon salad is so easy to make and wonderful to meal prep and keep in the fridge for a few days. It’s packed with nutrients like protein, healthy fats and fiber that can make you feel good with every bite you take. There are different ways to eat it, you can add or take away any ingredient to your liking, but it has great crunch and flavor from the butternut squash, to the buttery salmon and the homemade vinaigrette dressing.
Serves 1
Ingredients:
Greens and Kale
½ apple slices
¼ cup walnuts
¼ cup raisins
½ cup cooked quinoa
1 cup roasted butternut squash
¼ cup red onion
Salmon
2 tbs of melted butter
Garlic diced
Jalapeños
Lemon
Sea salt
Pepper
Paprika
Balsamic vinegar
Dijon mustard
Method:
- Cut the butternut squash into pieces and place it on a baking sheet. Sprinkle cilantro, salt on top and spray avocado oil.
- Place in the oven at 350 F for 15 minutes.
- Separately, cook the salmon with butter, garlic, paprika, jalapeño and lemon slices.
- Place in the oven at 350 F for 15 minutes.
For the salad:
In a bowl add the cooked quinoa, kale, onion, walnuts, pomegranate seeds, apple slices and raisins.
Add the cooked butternut squash and mix very well!
For the dressing:
mix balsamic vinegar and dijon mustard
In a plate place the salad, add the salmon on top and sprinkle the dressing. Enjoy!
