Carrot Cake Bites
NO BAKE Carrot Cake Bites! This is one of my favorite sweet recipes and I am so excited to finally share it with you. If you’re looking for a quick and healthy dessert or snack that doesn’t involve baking, these carrot cake bites are the perfect recipe for you. I used the pulp that is left over from carrot juice, it’s a great way to use leftover fiber. Plus, they are delicious! They are a healthy dessert in a small sized form, that will satisfy your sweet tooth in one bite!
Serves 1
Ingredients:
¾ cup of carrot pulp (can also sub for shredded carrots)
1 cup of dates
1 cup of pecans
Cinnamon powder
Ginger powder
Clove powder
Salt
Stevia extract
Coconut cream
Method:
1. Place the pecans in the food processor and process thoroughly until you get a crumble consistency.
2. Add the carrot pulp, dates, cinnamon, ginger, clove, and salt into the processor and process until the mixture is well combined and doughy.
2. Add stevia to the dough and mix it well.
3. Shape dough into balls.
4. Top it of with coconut cream and sprinkle cinnamon.
5. Eat & Enjoy!
