What I Eat in a Work Day

On busy work days, I don’t like to spend a lot of time in the kitchen. Of course, it’s still important to eat delicious and nutritious food! To help you guys, I made a video about what I eat in a work day. Here are some of the highlights!

Serves 1

First Thing in the Morning

Ingredients:
2 tablespoons apple cider vinegar
juice of 1 Meyer lemon
cayenne powder to taste

Method:
Pour all the ingredients into a big Mason jar full of water and mix to combine. Drink up!

Breakfast

Ingredients:
1 cup almond milk
1/2 cup frozen strawberries
1 banana
1 1/2 teaspoons cinnamon
1 scoop protein powder (optional)

Method:
Blend all the ingredients together, and enjoy!

Lunch

Ingredients:
1 head of broccoli (approximately 2 cups)
2 rice crackers
1 avocado
salt and pepper to taste
paprika powder to taste
cayenne powder to taste
Nutritional yeast to taste

Method:
Steam the broccoli head whole.
Spread half of the avocado across each of the rice crackers. Sprinkle with salt, pepper, paprika, and cayenne to taste.
Cut the steamed broccoli into easily manageable pieces and sprinkle with nutritional yeast.

Dinner

Ingredients:
1 large tomato
1 block of tofu
1/4 small red onion
4 white mushrooms
2 small radishes
1 tablespoon soy sauce
garlic powder to taste
cumin to taste
1/2 lemon
4 romaine lettuce leaves
4 teaspoons Dijon mustard
1/2 cup sprouts
1/2 avocado
salsa to taste

Method:
Cut the tomato, tofu, and red onion into strips. Slice the mushrooms. Very thinly slice the radishes.
Saute the red onion in the soy sauce over medium heat. After the soy sauce begins to evaporate, add the tomato and tofu strips. Stir, then add the sliced mushrooms.
Add garlic powder and cumin to taste, as well as the juice of 1/2 lemon. Continue to cook the mixture, stirring, until the vegetables are tender.
Spread each romaine lettuce leaf with 1 teaspoon of mustard. Divide the tofu-tomato mixture between each of the leaves, and top with the sprouts.
Divide the thinly sliced radishes between the four leaves, and top with avocado and salsa.

Throughout the day, remember to listen to your body! It’s so important to eat the amount of food that your body needs, and listen to what it’s craving, instead of trying to force yourself to eat a specific amount at a set time.
