Potato Dinners for a Week
Potatoes contain 75% water and no fat, but are a great source of nutrients. I love experimenting with ingredients and coming up with recipes, so I’ve created seven mouthwatering potato recipes for you!
Serves 1
Potato Patties
Ingredients:
3 potatoes
1 carrot
1/2 zucchini
salt and pepper to taste
3 tomatoes
¼ onion
oregano to taste
Method:
- Boil the potatoes until soft. Once they’re fork-tender, peel and mash them.
- While the potatoes boil, grate the carrot and zucchini.
- Add 5 tablespoons of grated carrot and 4 tablespoons of grated zucchini to the mashed potatoes, along with salt and pepper to taste. Mix thoroughly to combine.
- Form the potato mixture into balls. Cook the balls in a pan with a little bit of oil until golden-brown, flipping once.
- In a blender, blend the tomatoes along with salt, pepper, oregano, and the onion. Warm the resulting sauce in another pan.
- Pour the sauce over the potato patties, and enjoy!
Potato Soup
Ingredients:
4 potatoes
3 tomatoes
¼ onion
1 garlic clove
salt and pepper to taste
oregano to taste
Method:
- Peel the potatoes and cut them into strips, like you would for French fries. Soak the strips in water for around 10 minutes.
- While the potatoes are soaking, blend the tomatoes, onion and garlic along with salt, pepper, and oregano to taste.
- Drain the potato strips and place them in a pot. Pour the tomato sauce over them, cover, and cook for around 15 minutes.
Potato Turnovers
Ingredients:
5 potatoes
1 cup beans
salt and pepper to taste

Potato Pie
Ingredients:
5 potatoes
1 cup cashews
salt and pepper to taste
onion powder to taste
garlic powder to taste
nutritional yeast to taste
almond milk
Method:
- Peel the potatoes and cut them into thin slices. Boil the slices for about 5 to 7 minutes.
- Grind the cashews with salt, pepper, onion powder, garlic powder, nutritional yeast, and enough almond milk to create a thick sauce.
- Place a layer of potatoes in the bottom of a baking dish. Top with a layer of the cashew sauce. Repeat the layers.
- Bake at 350 degrees for about 20 minutes.
Potato Salad
Ingredients:
6 cups potatoes
2 cups celery
black olives
½ cup parsley
salt and pepper to taste
mustard to taste
Method:
- Cube the potatoes, then boil them. Once they’re fork-tender, drain them.
- While the potatoes boil, finely chop the celery, olives, and parsley.
- Mix the prepared celery, olives, and parsley with salt, pepper, and mustard to taste.
- Gently toss the cooked potato cubes with the celery mixture until thoroughly combined.
Mashed Potatoes
Ingredients:
5 potatoes
3 tablespoons cilantro
1 cup coconut milk or almond milk
salt and pepper to taste
Method:
- Peel the potatoes, and boil them until they’re soft. Once they’re fork-tender, mash them.
- While the potatoes boil, mince the cilantro.
- Mix the mashed potatoes with the remaining ingredients. Enjoy!
Taquitos de Papa
Ingredients:
4 potatoes
1 garlic clove
1 onion
3 tomatoes
salt and pepper to taste
olive oil
small tortillas
Method:
- Peel the potatoes, then boil them until they’re fork-tender. Cut the boiled potatoes into cubes.
- While the potatoes are boiling, mince the garlic and dice the onion and tomatoes.
- Saute the onion in a pan until tender, using a little bit of water instead of oil. Add the tomato and cook for a few more minutes, then add the potato cubes.
- Heat a little bit of olive oil in a separate pan. Once it’s hot, add a tortilla. Top with some of the potato-tomato mixture, then fold the tortilla shut.
- Allow to cook until the tortilla is golden-brown and beginning to blister on the bottom, then flip. Cook until the other side is equally golden. Repeat for each taquito.
