Potato Dinners for a Week

Potatoes contain 75% water and no fat, but are a great source of nutrients. I love experimenting with ingredients and coming up with recipes, so I’ve created seven mouthwatering potato recipes for you!

Serves 1

Potato Patties

Ingredients:
3 potatoes
1 carrot
1/2 zucchini
salt and pepper to taste
3 tomatoes
¼ onion
oregano to taste

Method:

  1. Boil the potatoes until soft. Once they’re fork-tender, peel and mash them.
  2. While the potatoes boil, grate the carrot and zucchini.
  3. Add 5 tablespoons of grated carrot and 4 tablespoons of grated zucchini to the mashed potatoes, along with salt and pepper to taste. Mix thoroughly to combine.
  4. Form the potato mixture into balls. Cook the balls in a pan with a little bit of oil until golden-brown, flipping once.
  5. In a blender, blend the tomatoes along with salt, pepper, oregano, and the onion. Warm the resulting sauce in another pan.
  6. Pour the sauce over the potato patties, and enjoy!

Taquitos de Papa

3 tomatoes
salt and pepper to taste
olive oil
small tortillas

  2. While the potatoes are boiling, mince the garlic and dice the onion and tomatoes.
  3. Saute the onion in a pan until tender, using a little bit of water instead of oil. Add the tomato and cook for a few more minutes, then add the potato cubes.
  4. Heat a little bit of olive oil in a separate pan. Once it’s hot, add a tortilla. Top with some of the potato-tomato mixture, then fold the tortilla shut.
  5. Allow to cook until the tortilla is golden-brown and beginning to blister on the bottom, then flip. Cook until the other side is equally golden. Repeat for each taquito.
