Salmon Salad in a Jar

Ingredients
- 1 tbsp ghee
- Salmon
- Season with salt and fresh garlic
- 1 cucumber
- 1/4 red onion
- 2 hard-boiled eggs
- 1 tbs of Greek yogurt
- 1 tbs of cottage cheese
- Fresh dill to taste
- 1/2 lemon juice
- Salt & pepper
Method
- Cook the salmon: In a pan over medium heat, melt 1 tablespoon of ghee. Season your salmon fillet with sea salt and garlic powder, then cook until golden and flaky. Let it cool slightly.
- Prep your vegetables: Using a mandoline or sharp knife, thinly slice the cucumber and red onion.
- Layer your jar: Grab a clean glass jar and begin layering in this order: cucumber, red onion, chopped hard-boiled eggs, a spoonful of Greek yogurt, a spoonful of cottage cheese and cooked salmon,
- Add flavor: Squeeze fresh lemon juice over the top, sprinkle with chopped fresh dill, and season with a little extra salt and pepper if desired.
- Seal & shake: Close the jar tightly, give it a good shake to mix everything together, and store in the fridge until you’re ready to enjoy.
