Three Quick Raw Vegan Breakfasts

I don’t eat completely raw anymore, but I still eat about 70% raw food. Raw food is living food, and it makes you feel vibrantly alive! Today, I want to share three delicious raw vegan breakfasts that are so quick to make that you can have them even on the busiest days.

Serves 1

Lemon Vanilla Rawnola

Ingredients:
1 cup rolled oats
10 small dates, pitted
1/4 teaspoon vanilla bean powder (or vanilla extract)
1 teaspoon lemon juice
1 lemon

Method:
Put your oats in a food processor (or blender). Process until they’re crushed up a bit, but not powdered.
Add the dates, vanilla powder (or extract), and lemon juice to the blender. Process until it reaches a grainy consistency, then scoop into a bowl.

Finely grate some lemon zest on top, and enjoy!

Raw Vegan Banana Flax Meal Pudding

Ingredients:
2 frozen bananas
1/2 cup flax meal
1/4 cup frozen raspberries or strawberries (plus a few extras for garnish!)
4 medjool dates
3/4 cup almond milk
1/2 fresh banana

Instructions:
Put the frozen bananas, flax meal, raspberries or strawberries (setting aside a few for garnish), dates, and almond milk into a blender. Blend until smooth.
Garnish with the remaining berries plus the half banana, cut into slices.

Protein Strawberry Banana Ice Cream

Ingredients:
1 frozen banana
1 cup frozen berries
1 scoop Vivo Life protein powder

Instructions:
Put all of the ingredients into a blender and blend well to create an ice-cream-like texture. It’s that simple!

Tip: to make this ice cream even more delicious, sprinkle some shredded coconut on top.
