Watermelon Pizza
Serves 3
Ingredients:
Watermelon
Greek yogurt (can sub for coconut yogurt)
Mixed Berries
Grated Coconut
Any other topping you want!
Method:
- Cut the watermelon down the middle and then again as a 3 inch thick board. Take the knife and cut it again into slices.
- Spread an even layer of greek yogurt on the pizza.
- Add the mixed berries and grated coconut. You can add as many toppings as you like and drizzle a bit of honey on top!
Meal-prep: Pre-cut watermelon slices (without toppings) and put them in the fridge in an air-tight container for up to 3 days.
